Parés Baltà, Cava Brut NV

A family owned winery dating back to 1790, Parés Baltà now owns five estates across the Penedès mountains. The variety of the soils and elevation create unique microclimates that give a special personality to their wines. Organic viticulture is at the heart of the operation, with the team at Parés Baltà even using its own flock of sheep to fertilise the vineyard and bees for pollination during the flowering season - how good. Cava Brut NV is made from the classic Cava blend of Parellada, Macabeu (Viura) and Xarel-lo. Pale yellow in colour, it has a nose of apple, pear and blossom with a slight touch of creaminess. Fresh and lively on the palate with more fruity flavours and a nice lick of salty-minerally acidity carrying the pleasantly long finish. Great as an aperitif or paired with shellfish.
